The culinary narrative of The Mediterranean Noosa is curated by Executive Chef Zac Kelly. Born and raised on the shores of Noosa, Zac honed his craft at the iconic Sails Restaurant, rising to Senior Sous Chef before setting off to explore global flavours in the Cayman Islands. Now, he returns home to anchor our kitchen, fusing his deep coastal roots with a sophisticated, international perspective.

Behind the scenes, Zac joins forces with hospitality veterans Sam Troxell and John Forest. Together, this leadership team brings over 60 years of combined alchemy from acclaimed bars and restaurants across Australia, London, Malaysia, the Caribbean, Canada, and the United States.
Their philosophy is simple: to weave memorable late-night stories through exceptional cuisine, masterfully poured spirits, and a warm, genuine atmosphere where every guest instantly feels like an insider.
